Cream of cauliflower gratin

Cream of cauliflower gratin

ingredients

     1 cauliflower
     100g grated cheese
     1 liter chicken stock
     50g butter
     150 g thick sour cream
     1 pinch of grated nutmeg
     chives
     salt pepper

Preparation

STEP 1- Coupez cauliflower into small florets. Wash them.

STEP 2- Faites Melt the butter in a casserole. Paint it the cauliflower florets to return 5 minutes, stirring.

STEP 3- Versez broth into the pan, salt and pepper, bring to a boil. Reduce heat and cook for 20 minutes.

STEP 4- Mixez cauliflower with broth until a fine soup. Return the soup over low heat, and stir in the cream, stirring. Season with nutmeg and chives. Salt and pepper.

STEP 5- For the first stirrings, remove from heat. Divide the soup into ovenproof bowls. Sprinkle with grated cheese.

STEP 6- Preheat the oven grill position. Bake the bowls and let the grill.

STEP 7- Servez right out of the oven.
